The Sous Chef should be a strong presence, confident in their abilities to direct and maintain the head chef's standards at all times. Being able to co-ordinate the team and execute all schedules for mis en and service.
Previous kitchen experience to a high standard.

Desire to learn & develop an extensive knowledge of food.
Attention to detail at all times with a no compromise mentality.
Knowledge of basic kitchen sections.
The confidence to execute tasks efficiently at the point of asking.
Being part of the recruitment, interviewing process, performance management process and all linked administration in conjunction with the Human resources Department, for all employees within the kitchen team.
To manage the appropriate levels, procedures and conditions of stock.
Ensure the team are fully trained to use any equipment they may need to perform their duties.
To ensure all team members understand and comply with all relevant licensable activities.
Responsible for the efficient running of the department in line with budgeted manning percentage.
